Clever Dripper: an easy start with specialty coffee

The Clever Dripper combines the control of a paper filter with the forgiving nature of immersion. If V60 has felt too technical so far — start here.
Pour all the water at once, wait, and place the Clever on the cup. The valve opens, the coffee drains down. No pulse pours, no stopwatch precision required.
Why it works for beginners
Contact time does not depend on your pouring tempo. A clumsy pour does not ruin the cup. You get a clean, balanced brew on your first attempt.
What you need
Clever Dripper (size L), V60-02 paper filters, a grinder with even particle size, a scale, and a thermometer or temperature-controlled kettle.
Single-cup recipe
15g coffee, medium grind (like sea salt). 250g water at 92 °C. Rinse the filter.
Pour 50g of water over the grounds. Stir gently. Wait 30 seconds.
Top up to 250g total. No rush — a steady stream in the centre.
Place the Clever on the cup. Drawdown takes about 30–40 seconds.
Common mistakes
- Grind too fine — the bed clogs and the cup turns bitter.
- Cold water — below 90 °C gives a sour, flat flavour.
- Skipping the filter rinse — leaves a papery aftertaste.
- Resting the Clever on the cup during steeping — the water starts draining too early.
